I know it's not fall anymore or the season for pumpkin flavored things...but I never need an excuse to combine pumpkin, chocolate, and cream cheese!
PUMPKIN CHOCOLATE CHIP CUPCAKES
1 box SPICE CAKE
1 small can of PUMPKIN
1/4 c APPLESAUCE
1/2 c CHOCOLATE CHIPS
1/4 c WATER
CREAM CHEESE ICING
(from Our Best Bites)
Two 8oz CREAM CHEESE blocks
1/2 c BUTTER
2 c POWDERED SUGAR
1 tsp VANILLA EXTRACT (or almond)
STEP 1: Beat together cake mix ingredients and bake at 325 degrees for 20-25 minutes.
STEP 2: While cupcakes are baking, make the icing. Cream together the cream cheese, butter until combined. Beat in extract and then gradually add powdered sugar.
STEP: Ice the cooled cupcakes and enjoy! Top with mini chocolate chips if you want more chocolate taste...and who doesn't want that?
